i'm sorry....but in my comment Gin is the code name of one mumber in black organization　which always use the name of WINE as mumber's code name.
So here Gin is not the meaning of color but is a kind of wine,and he is a mumber in BLACK organization,then i should call black as his color:)

well they did make that statement in the conan movies by changing his hair from bleach to silver so yeah Gin refered to silver
